Dinners on a Dime


There are so many sales on meat this week at both Meijer and Kroger, it makes menu planning an easy task. I've pulled together a collection of new recipes, and I'm looking forward to trying them next week.


Whole Slow Cooker Chicken

1 whole chicken (3 lbs.), skin removed
1/2 cup chicken broth
1/3 cup soy sauce
1/3 cup olive oil
1/4 cup honey
1 teaspoon Worcestershire sauce
2 teaspoons balsamic vinegar
2 teaspoons lemon juice
1 teaspoon sesame oil
2 tablespoons minced garlic

Remove skin from chicken and clean the inner cavity. Pat dry with a paper towel and place into crock pot. Mix together chicken broth, soy sauce, olive oil, honey, Worcestershire sauce, balsamic vinegar, lemon juice, sesame oil, and garlic. Pour over chicken and cover. Cook on low for heat for 8 hours or high heat for 4 hours.

Easy Chicken Tetrazzini
(Adapted from AllRecipes.com)

1 lb. spaghetti, cooked and drained
5 chicken breasts, cooked and cubed
2 cans condensed cream of chicken soup
1 can chicken broth
1/4 cup butter
1/2 cup chopped onion, sauteed
1 cup cheddar cheese

Put spaghetti in 9x13 pan. Top with chicken and onions. In medium saucepan, combine cream of chicken soup, chicken broth, and butter. Bring to a boil. Pour over chicken and onions. Top with cheddar cheese. Bake at 350 degrees for 25 minutes.

Beef Stroganoff

1/2 cup diced onion
1 clove garlic
1/4 cup butter
1 lb. ground beef
2 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
8 oz. canned or fresh mushrooms
1 can cream of chicken soup
1 cup sour cream
Egg noodles

Saute onion, garlic, and butter over medium heat. Add browned meat. Add flour, salt, pepper, and mushrooms. Cook for 5 minutes. Add soup and simmer for 10 minutes uncovered. Stir in sour cream. Heat until hot. Serve over egg noodles.

Italian Sausage & Bow Tie Pasta

1 package Johnsonville Italian mild sausage links
1 lb. bow tie pasta
3 Tbsp. olive oil
1 medium zucchini, thinly sliced
15 cherry tomatoes, halved
1 medium onion, sliced into thin wedges
3 garlic cloves, minced
Salt and pepper to taste

In a large skillet, cook sausage according to the package directions. Meanwhile, cook pasta according to package directions. Remove sausage from the skillet; cool slightly. Cut into ½-in. slices; set aside. In the same skillet, heat olive oil. Add the zucchini, cherry tomatoes, onion and garlic. Saute for 2-3 minutes or until tender. Add sausage and heat through. Drain pasta; add to sausage mixture. Toss to combine. Sprinkle with salt and pepper. Serve immediately.

As a side note, I love to cook and bake in my kitchen. However, I don't love messes, so I try to keep things as orderly as possible as I'm cooking. I found an easy trick years ago for making less messy pancakes.

After mixing up my pancake batter, I use a turkey baster to distribute an adequate amount of batter into the skillet. It allows me to have very careful control over the amount of batter I need for each pancake, while at the same time, it helps me avoid pancake batter drips all over my counter.
